I still remember the first time I ate mexican food-- it was a quesidilla at a really cool local bookstore/restaurant. I was hooked! There's hardly a mexican dish that I haven't eaten, and I never get tired of it. That's why i was so psyched to come across this cookbook by Lisa James.
She covers just about everything I could really want in a way that's easy to follow and put together. I'm not a big cook, but do like to do it, and have fun making mexican-dishes.
This is really helpful and gives me ideas for just about any meal of the day. After i went through it, I actually thought i could pull off a great cinco de mayo party!
Oh, and besides there being a lot of good recipes, the cookbook was super-easy to navigate and had a helpful clickable table of contents.

I love Mexican food!
Being from Canada we do not see a lot of it here or for that matter a lot of quality Mexican food.

The book is laid out quite well, the index has all clickable links.
Information is organized into easily read blocks with step by step instructions.

Lots of info, lots of recipes great variety!
4.5 out of 5 ... add in photos, pictures and this would be 6 out of 5 for a rating !

While I LOVE to eat out at Mexican restaurants, I have done little to no Mexican cooking myself. Having decided to change this, I went looking for a good starting point. I grabbed a copy of Authentic Mexican Vegetarian Recipes and it has proved to be an excellent beginning.

The first section in an informative one -- Know Your Ingredients. This is a brief but great intro, explaining about Mexican corn and cheese.

Next, Lisa takes you by the hand and teaches you how to make Tortillas, the cornerstone of Mexican cuisine.

After that, you will find a large number of interesting and well explained recipes, running the gamut from Appetizers to Stews to Main Dishes, and on to Desserts.

Whether you are new to Mexican cooking of experienced, this cookbook has a excellent vegetarian recipes for you!

I was impressed with the fantastic cover presentation of ?chile? I didn't find a recipe that fit. And I was thoroughly disappointed that there were no recipe photos of any kind whatsoever throughout the book. Next edition they should include photos. Recipe information easily found and adapted elsewhere on the web. At the price I guess it's OK. But just OK. Photos please. This is a cookbook. Presentation is 50% of the dining experience.

The recipes are vegetarian with dairy so not suitable for vegans but they are easy to follow and fairly straightforward. Any cook who can get around in the kitchen will find many recipe ideas with this cookbook. I especially liked their version for Dulce de Leche Cake and the Quinoa and bean salad. Worth keeping in your library.

I downloaded this for free on my kindle. Tonight I made the flour tortillas with my daughter. There were less than 5 ingredients: whole wheat flour, margarine, salt and water. It was very simple and fun and everyone loved them. I cannot wait to try the corn tortillas next time.

Update February 4, 2013: We did make some corn tortillas and they only had 3 ingredients. Corn flour, salt and water were all it took to make yummy homemade tortillas. This is a good and easy recipe. I did not realize they were so easy to make.

Update February 9, 2013: Last night we made the guacamole and it was terrific. An explosion of flavor...garlic, onions, advocados, lime...mmmmm! The family gives it 5 hearts.

I love Mexican cuisine and cook it all the time so wasn't sure I needed this book and wasn't sure how I would like a cookbook in ebook format. It was free so I got it and I'm glad I did. The recipes are authentic and many I hadn't made before. The formatting was very well done so the book works very well as an ebook. There are a lot of recipes that call for cheese/dairy which I can't eat, but many of them can be made w/o the cheese and are still good. Obviously poblano chilies stuffed with cheese made w/o cheese would no longer be a poblano stuffed with cheese but if I really wanted to, I could use non-dairy cheese. Some actually aren't that bad! Thanks for some new Mexican vegetarian recipes.

I haven't read enough of the book to offer a review of the contents; this comment applies only to the lack of easy access to a Table of Contents, which to me is essential in a cookbook. Of course, I can create a link to the TOC by going to the cover, moving down and setting a bookmark. But this is tedious, to say the least. Nothing on the Amazon page alerts me to the problem, which some Googling suggests is common to many Kindle books. It's time for Amazon to provide a complete description of what each book includes and does not include: Does it have an accessible table of contents? Is it indexed? Was it only optically scanned or edited?

Ingredients are a bit vague, generally not very inspiring bit of a waste of money and a bit disappointed by it
