I have tried to include a healthy variety of recipes (we tend to limit our red meat intake) so there are chicken and vegetarian dishes to choose from. As you may know from my other cookbooks, my family and friends expect a cake or pudding when they visit and I thoroughly enjoyed testing out dessert recipes in my slow cooker.
The aim of this book is to offer healthy, tasty slow cooker dishes which are economical to serve without using canned creamed soups as thickeners and sauces as these often contain too much salt, including MSG, and hydrogenated fats. You'll see I'm not averse to using healthy convenience foods as there are plenty of canned tomatoes and various canned beans in the recipes.
Some of the recipes call for browning of meat or sauteeing of vegetables and whilst this involves a little extra preparation, it is worth the effort in terms of flavour, colour and texture for the finished dish. However, if you prefer, or if you're pushed for time, you can in most cases simply put the ingredients in the pot and leave them to it - simply omit the oil if all your ingredients are going straight into the pot. Exceptions to the "all in the pot at once method" include rice, aubergines and dried beans - refer to the individual recipes .
Hopefully, you'll find recipes to suit your lifestyle with all its different requirements. Whether you're cooking for a family weekend, a holiday event, a special dinner or simply food for the end of a working day, the versatility of a slow cooker allows it to do one thing extremely well: to free up more of your time. However you choose to spend your "extra time", raise a smile to your your humble slow cooker/crockpot.
